Bread Making at Del Posto

A few months ago a friend graciously passed on a ticket for a bread making class at Del Posto. She was unable to attend the event, part of the New York Food & Wine Festival, and she thought I might enjoy it. It was amazing. We got in the kitchen with the fabulous head baker, Ernesto Gonzalez - formerly of La Brea Bakery, and watched him make beautiful focaccia rolls, kalamata olive rolls, mini baguettes, and multi-grain rolls. At the end of the class he served them to us with whipped, unsalted butter and rosemary-lardo spread. The focaccia alone was life changing, and though I have been back for a full meal since, the bread at Del Posto still stands out as one of the greatest components of their dining experience.
